Schiro's Restaurant, Royal Street, Bywater...

One of my favorite all-time po-boys is the classic hot sausage sandwich. Take a couple patties of Patton's hot sausage, grill them up, then serve them dressed with a little mayo on good french bread.

Schiro's in da Bywater gets it right:
